This recipe is super easy and 100% worth the morning energy!
Having no energy all the time is not normal. That is your body trying to tell you something is off. Is exhaustion from doing too much a real thing? Absolutely! But, so is exhaustion created from not eating enough, too much stress, However, as mom, I know it’s challenging to be there for your family if you’re always too tired.
Breakfast Burrito
Ingredients
1 dozen eggs
5-8 tortillas (whole wheat :)
1c mushrooms, sliced
1c bell peppers, chopped
1c sharp cheddar shredded cheese
4 slices turkey bacon
Directions
Cook bacon according to the package. Meanwhile, wash and slice/chop produce. On the stove top, spray pan. Scramble eggs and all produce on low. Add cheese. Once bacon is cooked, chop and add to egg mixture. Place tortilla shell on appropriate sized tin foil and wrap. I start these in the morning while I am getting ready (bake 250 for about 40 mins). These freeze very well!!! If you want to brave the microwave with these (I like mine a little crunchy/fresh outta the oven) you may have to put them in Saran Wrap instead of tin foil and determine appropriate cook time. Enjoy!
